Green Angel Veggie Recipes

a few of my favourite easy recipes, tasty veggie snacks and meals for you to enjoy

* Cheesy Cauliflower Bake *

* Veggie Mince Pie *

* Vegetable Stir Fry *

* Cucumber & Crisp Sandwich *

 

* Cheesy Cauliflower Bake *

you will need..

half a large cauliflower or 1 x small cauliflower

a few broccoli spears

approx 2kg potatoes maris piper are perfect but any will do

1 x pkt cheese sauce mix

approx 200g favourite cheese cheddar / red leicester etc

vary ingredients if you like

boil / steam cauliflower and broccoli until fully cooked.

boil potatoes until they are soft then mash them.

make cheese sauce packet mix often a little milk is needed depending upon variety.

grate the cheese

put the cauliflower and broccoli into a large oven proof dish

pour on the cheese sauce

sprinkle on most of the grated cheese

spread the mashed potato on top similar to shepherds pie

sprinkle the rest of the grated cheese on top of potato

bake at approx 190°C /375°F / gas mark 5 until cheese bubbles should only take about 20 min's or so.

.serve on its own or with a few veggies.

its really easy once you've done it and really filling

 

* Veggie Mince Pie *

you will need

vegetarian mince

gravy - i use bisto granules really tasty and easy

onions - sliced

mushrooms - sliced

puff pastry - I use ready made stuff, really easy

1 x egg to glaze

pre-heat oven to 200°C /400°F / gas mark 6

cook the mince in a large frying pan

add mushrooms and onions

when cooked add gravy keeping it to a thick consistency

stir until everything is covered in gravy

pour into a large oven proof dish

roll out the puff pastry not too thin, half an inch thick is perfect

place over mince overlapping all edges of ovenproof dish

glaze with whisked egg

make a few leaves out of spare pastry for decoration and place on corners of pie then glaze the leaves

bake in the centre of a pre-heated oven until pastry has risen and has gone golden brown

if this doesn't turn out to be the most delicious pie you have tasted either change your gravy or let me know.

 

* Vegetable Stir Fry *

you will need

broccoli

carrots

mange tout - flat green beans

onions

mushrooms

bean sprouts

red / green / yellow peppers

3 x vegetable oxo cubes

oil for frying

sesame oil for flavour - my favourite is organic toasted sesame oil

slice all vegetables into fair sized but thin chunks

slice carrots into long, wide but thin slices

heat some oil in a wok or large frying pan

add carrots first they take longest

fry until they go a paler colour than they were

add broccoli - fry until bright green and nearly soft

then add all other ingredients

fry, stirring constantly

sprinkle oxo cubes on vegetables

add a few shakes of sesame oil

stir the flavour into all the vegetables

serve immediately

any of the ingredients can be varied to suit your taste but remember to fry the vegetables that take the longest to cook (broccoli, carrots etc,)before adding the others ( bean sprouts, peppers etc).

 

* Onion & Mushroom Gravy *

you will need

gravy - i use bisto granules really tasty and easy

1 x large onion sliced finely

100g mushrooms sliced

make up the gravy as usual

put in a saucepan and sprinkle in mushrooms and onions

heat on a low heat until the mushrooms and onions are soft

serve.

nice with a roast vegetable dinner, with pies, in fact anything where you would normally use gravy.

 

* Banana Taste Bud Tickler *

You will need.. -

1 x banana large and ripe

few raisins or sultanas / currants / cherries etc.

scoop of favourite ice cream mmmmm!

peanut butter - smooth or crunchy

strawberry syrup or maple syrup / golden syrup in fact any sweet syrup

you can vary ingredients to suit your mood

slice banana lengthways

spread one half on the flat side with peanut butter

spread the other half with ice cream

sprinkle raisins onto peanut butter

put two halves of banana together like a sandwich

squirt strawberry syrup over top.

Enjoy!

this is one of my favourite bedtime snacks!

 

* Cucumber and Crisp Sandwich *

you will need..

2 x slices bread white / brown / wholemeal / soft rolls etc

butter or margarine

1 x packet of crisps - preferably flavoured

cucumber few slices

salad cream optional

butter the bread / roll

ingredients can be varied

take 1 x slice of bread and sprinkle on crisps without eating them first!

lay slices of cucumber on top of crisps

spread salad cream on other slice of bread - optional

squash two slices together and cut into 4 x triangles ( to make it look nice!)

lock yourself in a room where no-one can get their hands on it and enjoy
